French Onion Soup

Deeply caramelized onions in rich beef broth, topped with toasted bread and melted cheese.

  2. Cook the onions slowly in butter over low heat until deeply caramelized, about 40 minutes.
  3. Add a splash of wine to deglaze the pot, scraping up the browned bits.
  4. Pour in beef stock.
  5. Simmer for 20 minutes to develop flavor.
  6. Season with salt, pepper and a sprig of thyme.
  7. Ladle the soup into oven-safe bowls.
  8. Top each bowl with a slice of toasted baguette.
  9. Cover generously with grated gruyère.
  10. Broil until bubbly and golden.
